Birinj Biryan a quintessential aromatic delicacy claimed to be originated in India is actually not Indian; Here I am talking about Biryani. A rice and meat delicacy originated in Iran, which is prepared in almost every state of India having a distinct flavor with the regional influence in it .

The term Biryani is derived from the Persian name Birinj Biryan which literally means Fried rice. Historians claim that it was originally made for the solider as they generally use to carry rice and spices with them and they used to make a one pot meal mixing the rice with what ever meat was available in that region. It was a wholesome meal fulfilling and nutritional.

what is Biryani?

Biryani is dum cooked rice with meat where meat is merinated with curd and spices and rice is fried and then layered in a pot and cooked on slow fire. This dish has evolved and travelled a long journey from the battle field to a royal delicacy.

From war front to royal kitchen

From Iran to India, from the battle field to the Royal kitchen Biryani has evolved with time. this dish has travelled to india through soilders and traders.

Evolution of Biryani in India

Historians claim that it was first made in Mughal kitchen at the time when lucknow was known as awadh and it was named as awadhi biryani which is very flavorful and fragrant.

From Awadh it travelled to calcutta when Nawab Wajid Ali Shah was deposed in calcutta. Here potato was added in the biryani which gives a earthy falavour to it.

Aurangeb placed Asaf Jahi in the position of Nawab -ul- mulk and this introduced the Hyderabadi biryani which is spicey then the northern version and the most popular one.

From here in the reign of Tipu Sultan it travelled south wards.
Some historian claim that it was first made in malabar region in kerala from there it travelled towards north.

whatever may be the real story behind it but one thing is clear from Iran to India biryani has evolved and is now more indian in terms of verity and flavour. now it is more indian then persian.
